What ingredients are in the “golden shrimp sauce” they put atop the grilled shrimp in teppan-yaki restaurants

Teppan-yaki restaurants are the ones like Benihana’s, Domo77, Japan 77, Ron of Japan, etc. The golden shrimp sauce is put atop the grilling shrimp, then the lid is put on and the sauce puffs up and cooks during the steaming process. (I suspect it is an egg-based type of mayonnaise product) I’d like to know if it can be purchased commercially, or if it’s merely concocted–and what a good recipe for it is. Does anyone have a good recipe for homemade mustard?

My son (11) loves to cook. He usually cooks lobster, shrimp concoctions, and meat and potato dishes. He noticed that there are not many ingredients in a jar of conventional store-bought mustard and decided he would like to try making some himself. Please post the recipe , including all the ingredients, quantities, and mixing/heating tricks that you might use. Also, please suggest dishes that this mustard tastes best with. Thanks so much. I’m looking forward to seeing how this turns out and to sampling the final product!
