  2. they’re as expensive as the rest, so really you should consider their price before just chucking them out…
    and actually if you cook a prawn dish with whole prawns (rather than headless and tailless) the dish is much more tasty… yum, a prawn-brain flavoured dish!

    - and apart from protein, there are loads of interesting nutrients in the central nervous system (ie brain and nerves)
    - and you don’t digest shell, so there’s no point in eating it on a strict nutritional basis. (but it will help bulk up your faeces, if that’s what you’re after!)

The best way to get the nutrition out of the heads and tails of shrimp is to use them with the rest of the peeled shells and boil them in water with celery and onion and a bay leaf to make shrimp stock. Use that liquid in making sauces for any seafood. It has not only nutritional value but also adds tons of flavor.
