  1. Scampi Shrimp Skewers

    Ingredients
    1 pound fresh or frozen medium shrimp in shells (26 to 30)
    1 tablespoon margarine or butter
    1 tablespoon olive oil or cooking oil
    2 cloves garlic, minced
    3 tablespoons dry white wine
    2 tablespoons snipped fresh parsley
    1/2 teaspoon finely shredded lemon peel
    1/8 teaspoon ground black pepper
    6 green onions, cut into 1-inch pieces
    1 large red sweet pepper, cut into 1-inch pieces

    Directions
    1. Thaw shrimp, if frozen. Peel shrimp, leaving tails intact. Devein shrimp. Place margarine or butter and oil in a small saucepan; melt over medium-high heat. Add garlic and cook 2 minutes; remove from heat. Stir in wine, parsley, lemon peel, and ground pepper; set aside.
    2. Thread shrimp, green onion pieces, and pepper pieces onto 6-inch long appetizer skewers. (If using wooden skewers, soak them in water for at least 30 minutes before planned grilling time to prevent scorching.) Brush with garlic mixture.
    3. Grill the skewered shrimp and vegetables on a grill rack directly over medium heat for 6 to 8 minutes or until shrimp turn pink, turning once and brushing with garlic mixture halfway through grilling. Serve immediately. Makes 15 to 20 appetizer servings.

    Shrimp Scampi

    Ingredients
    1 tablespoon butter
    2 tablespoons olive oil
    4 cloves garlic, finely chopped
    1 pound medium-size shrimp, cleaned
    1/4 cup dry white wine
    1 tablespoon fresh lemon juice
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1 tablespoon flavored bread crumbs
    2 tablespoons fresh parsley

    Directions
    1. Heat butter and oil in large nonstick skillet over high heat. When butter starts to brown, add garlic. Reduce heat; cook 1 minute, stirring to prevent garlic from overbrowning.
    2. Add shrimp; cook 2 minutes, stirring from time to time. Add wine, lemon juice, salt and pepper; cook 2 minutes or until shrimp is cooked through. Stir in bread crumbs and parsley. Serve immediately. Makes 4 servings.

  2. EASY SCAMPI

    3/4 cup unsalted butter
    1/4 cup finely chopped onion
    4-5 cloves crushed garlic
    4 sprigs parsley chopped
    1 pound of uncooked medium shrimp deveined
    1/4 cup dry white wine
    2 tablespoons fresh lemon juice
    salt and freshly ground pepper

    Melt butter in medium skillet over low heat. Add garlic and parsley and saute until golden: about 10 minutes. Add shrimp and stir just until pink. Remove Shrimp and place in ovenproof dish. cover lightly and keep warm. Add wine and lemon juice to skillet and simmer about 2-3 minutes season to taste with salt and pepper and pour over shrimp. DELISH

    serve over a bed of rice
    and serve with garlic bread!!!
